Knowing some people's prejudices against plant-based food, I wanted to treat two friends to Gus' incredible tofu sandwiches without their knowing it was tofu they were eating, and I really think both friends thought the sandwiches were delicious--until one friend asked, "Is this tuna?" and I answered, "No, it's tofu."  Her husband stopped eating it.
