Yosemite National Park--So Beautiful but Missing the Eco-Vegan Options

We had a wonderful time in Yosemite with friends, oohing and ahhing over the splendor and deciding that there should really be only shuttle busses (or a train?)  to do away with the bumper-to-bumper cars--especially in a place that is all about keeping the environment beautiful.

Another way that there seems to be no awareness is in food options.  This is a place that should be educating people about vegan options and REASONS that vegan options are kinder to animals and to the environment.

Instead they had nothing vegan on their menu.  It was a question of removing things.



 This was fine as a snack:  Crostini Broschetta and tomates with assorted olives.  But since they had chili con carne, couldn't they have had another vat of no-beef chili?


Our hostess made vegetarian chile with tofu for us our first night, a very nice gesture that Yosemite could make.

We had two other delicious dishes made by those being hosted--gallo pinto, the famous Nicaraguan-Costa Rican dish, and a Nigerian stew.



For shame that I did not make any of these dishes!  I believed it when I heard that the hostess liked to cook for us, so I thought we would take her out to dinner when she tired of cooking!

Next time I'll take along dishes and recipes just in case!  (I did walk with my suitcase for half a mile, take a streetcar and then a BART train, and I DID bring some vegan crescent cookies.)

Okay, Yosemite people:  You and I have got to do better!
